Breakfast Lasagna Tower

Low Carb (LC)

Rest day for Cycle 2 (C2)

2 eggs + 1 white (F)

75g Beef mince / turkey mince (P)

1 spring onions (V)

50g Mushrooms (V)

60g chopped tin tomatoes with Italian herbs

65g chopped up asparagus (GV)

65g chopped courgette (GV)

50g Smoked salmon slices

50g Greek yogurt



Place your meat, onion, veg and green veg in a pan to cook.

While the above is cook, mix the 2 eggs & egg white into a bowl and pour some oil into a large frying pan. Once the oil is hot, pour half the egg mix into the pan. This will cook like an pancake. Try to make two, and once cooked cut in to roughly 4cm slices and place to the side.

Once the meat is cooked through mix in the tin tomatoes, leaving to cook for a few minutes.

Now, get a lasagna dish and follow the following method

  • Lay a thin layer of your meat mix
  • Followed by a slice of salmon
  • Then lay a layer of the egg sheets
  • Topped with a few spoons of greek yogurt.
  • Repeat this once more over.

You are then welcome to finish with a sprinkle of Mozzarella depending on your allowance for the rest off the day due to the egg and cheese both being Fats.

(GV) – Green Vegetables

(S) – Sauce
