210g Cod fillets (P)
60g onion (V)
130g Peas (GV)
2 Slices of GF bread (C)
sprinkle of Garlic
sprinkle of parsley
Sprinkle of Chives
Sour cream (s)
Cut your two slices of bread in to four halves.
Use one half and blitz in a blender to make breadcrumbs.
Now get your Cod fillets, dip in some flour, then egg followed by the breadcrumbs
*(you can use sesame seeds instead of breadcrumbs if you wish)
Drizzle some oil on a tray and pop in the over on 180oc for about 15/20 mins. Making sure the breadcrumbs don’t burn.
While the Cod is cooking, place the peas in some water in a microwavable dish and pop in the microwave for about 5/10 mins. Once these are cooked rinse them in cold water or let them cool down as you are going to need to blitz them in a blender.
(DO NOT PUT THEM IN HOT)
Once blended, either pop the mushy pea back in the microwave to warm back up.
Wack some onions on a frying pan to cook them up
Then finally place some sour cream in a bowl with some garlic, parsley and chives.
Now for the making of the tower!!
- Once your cod is cooked cut into fingers, get your bread (you can toast it if your wish),
- lay half a piece of bread on a plate
- spread some of sour cream mix
- followed by the onions
- and a layer of mushy peas
- topped with some of cod fingers
- follow this process till you have a the last piece of bread on top
You may need a stick to stop the tower collapsing!!
